Lemon Chicken Chop




Ingredients:
chicken thighs (deboned)
lemon juice
lemon zest
dark soya sauce
light soya sauce
black pepper
cauliflower
carrot wedges


1) To prepare the marinade, mix lemon juice, lemon zest, dark soya sauce, light soya sauce and black pepper in a bowl. Marinade the chicken thighs for at least a few hours.

2) Heat oven to 180 degrees celsius and put in marinated chicken to bake/grill for about 45 minutes. At 15 minute intervals, turn the chicken thighs and pour more of the marinade over them to keep the meat moist.

3) For the vegetables, put them in boiling hot water for about 10-15 minutes. Sprinkle salt and pepper to season.

4) Arrange chicken and vegetables on plate and it's ready to be served =)

Kailan Stem with Chicken

Kailan stem is one of the crunchy vegetables that I like and it doesn't take long to prepare at all.

Ingredients:
Kailan stem
carrot
diced chicken breast
garlic
light soya sauce
oyster sauce
huatiao wine
cooking oil


1) To prepare the kailan stem, use a fruit peeler to peel off the hard outer skin of the stem. Wash and cut them into wedges. Also chop some garlic and slice some carrot.

2) Season the diced chicken with some corn flour and light soya sauce. Leave aside for about 5-10 minutes.

3) Heat wok and add some oil. Add in garlic and fry till fragrant. Then add in the chicken and fry for a while. Lastly, add in the kailan stem and carrots and mix all ingredients well. Add a little water, oyster sauce and huatiao wine and cover for a few minutes.

Bread Pizza


This is a ultra-simple version of a pizza..... great for quick a 1-person meal. For this, I used sliced wholemeal bread, slap on some tomato sauce, cheese, onions, green pepper, mushrooms and diced chicken meat seasoned with some curry powder and soya sauce. Pop these into the oven for about 15 minutes (at about 180 degrees celsius) or until the chicken meat is cooked and there you have it -- pizza!

Orange Salmon


The only thing that requires cooking in this meal is the salmon and the oven was used to do this, so it's really easy!
Ingredients:
1 orange
light soya sauce
black pepper
salmon
fruits
baked beans
1) Season the salmon in the marinade (orange juice, light soya sauce, black pepper, orange zest) for at least 1/2 hour.
2) Seal the seasoned salmon and marinade in almunium foil and place on a baking tray in the oven (about 180 degrees celsius) for about 15 mins. Open the aluminium foil and bake for another 5-10 mins.
3) Placed cooked salmon on plate and add fruits and baked beans and the meal's ready!

Lettuce Dumplings


There was some leftover lettuce from making salads, thus the idea of making these -- lettuce dumplings. These do require a bit of preparation work but it's a healthy dish with meat and vegetables all in one!
Ingredients:
a few whole lettuce leaves
carrot shreds (for decoration)
minced pork
dried chinese mushrooms (soaked and sliced)
light soya sauce
black pepper
1) To start, steam the lettuce leaves for a few minutes until soft enough to wrap the meat
2) Season the minced pork with some light soya sauce and black pepper. You may like to add in the mushrooms (or any other ingredients, like prawns) to this mixture too.
3) Once the lettuce is ready and have cooled down sufficiently to handle, wrap little parcels of meat mixture in each lettuce leaf, much like wrapping a popiah
4) Arrange the lettuce dumplings on a plate and top each one with some shredded carrot for decoration. I added a little of the water used to soak the chinese mushrooms to the plate, then steamed for about 15 minutes until the dumplings are cooked. (timing depends on the size of the dumplings)
